Always with as little intervention as possible, in the vineyard and in the cellar. I rely on natural processes, from maceration on the skins through fermentation on wild yeasts to ageing on the fine lees. I keep sulphur as low as I can, and some wines have no added sulphur at all. My total SO2 stays under 60 mg/l. I bottle unfiltered. And I recently learned that wines made this way are called low-intervention." > > Josef Medek {.quote} ## What guests love The guests say it best themselves: Most people who stop by are not after a quick taste. They leave having finally learned how to taste wine properly, and with an evening they are glad to come back for. ## Tasting with the winemaker An evening at Vinařství Medek is in no hurry. Two pergolas in the garden seat smaller groups, for 6 and for 12. The cosy cellar under the family house holds up to 12. Larger groups, company events and celebrations are arranged by Jaromír together with local restaurants, in private or hired spaces. The sooner you get in touch, the surer it is. You can buy the wines right at the cellar or through the [e-shop](https://www.vinarstvimedek.cz/vinny-listek), delivered anywhere within three days. ## Which wines you will taste The cellar is built on dry whites: Riesling, the legendary Silvaner, and the resistant PIWI varieties such as Hibernal, Johanniter or Solaris, which guests keep declaring their love for in the reviews. Josef makes the frizzante from traditional varieties: Riesling, Sauvignon Blanc and Red Silvaner. The barrel-aged specials, reds included, are Josef's greatest pride. They all mature naturally and go into the bottle unfiltered, with just a minimum of sulphur and no other additives. Each has its own equipped kitchenette and its own separate little garden with a pergola and a view over the greenery, just right for sitting over an open bottle of wine. Both are cosy and practically equipped. Families with children and cyclists both love them: the cycle path is a minute from the house, and you can charge your bike and lock it up safely. They suit not just an overnight stay but a whole holiday. It can be reserved together with a tasting booking. ## On the open-cellar route If you set off from Vésky or Mařatice during the Derfla open cellars, Vinařství Medek is the first stop. From Uherské Hradiště and Kunovice you arrive at the very end of the route, and the finish is celebrated here: the music plays, homemade food comes out, and the cellar is among the last to close.
