Each of us makes wine their own way. Some barely intervene, some raise their wine with a firm hand, some let it live a life of its own. Stop by for a glass.

Pavel is a precise perfectionist, and yet very modest. In his cellar the bricks are stacked just so, and you won't find a single dried drip. That precision shows in the wine too, a clear choice for lovers of off-dry and semi-sweet wines with a balanced play of acidity and residual sugar.

Železniční 235, Sady
Alois is headstrong and stubborn, and with wine that means he does everything his own way. He keeps to the old country method, barely intervenes, and lets the wine live its own life as long as possible, with no added sulphur. The result is honest wine that pretends to be nothing it isn't. Guests love sitting in Alois's garden, with a huge cherry tree in the middle.

Vřesová 74, Sady
Ondra stands out because he makes natural wine even without a cellar. Just ask him, he's happy to tell the story and show you around. In the vineyard he lets the grapes overripen, often until the first snow, so among the specialities you'll find selection, ice and straw wines. He ferments on wild yeasts and lets the wines age on the lees for a full year if need be.

Tomáš and Mirek. They made their first wine in 2000, just the two of them in a single demijohn, with no family tradition behind them. After more than twenty years they pride themselves on clean wines with no technical faults. With the reds they go uncompromisingly for malolactic fermentation and barrel ageing, because 'a red deserves a barrel'.

Na Kopci 42, Sady
The Hron brothers make wine in the oldest and also the largest of the open cellars. They shine with the reds, and watch out, don't slip and say 'Rulanda', here they pour only 'Burgunda' or 'Pinot'! Above the cellar there's a wonderful spot in the garden among the vines, perfect for a picnic.

Na Kopci 68, Sady
Josef and Jaromír, father-in-law and son-in-law, will guide you through the world of unfiltered wine, fermented on wild yeasts and aged on the lees. What they treasure most are their barrel-aged specialities, and they love showing that Moravian reds can reach world class too. Every wine stays under 60 mg/l total sulphur, so it won't leave you with a headache.
We organise three regular events a year, the kind we would want to go to ourselves.

Sady was once a village of its own, no part of Uherské Hradiště back then. It only joined the town later. Historical records show it under the German name Derfle, which has survived in everyday local use to this day. In 1952 it was renamed Sady, after a local tract, a word that in Czech means ‘orchards’ and suits a place of gardens. The old name never left. The local form is Derfla.
This is where the Derfla winemakers, the Derfla open cellars and the Derfla young wines come from. It is the name of the place we come from.
A small tip for the road: a modern map shrugs at “Derfla”, and plain “Sady” might send you to the wrong place, so search “Sady, Uherské Hradiště”. On paper we belong to the town, at heart a village, and Derfla to ourselves.
